Thanks for calling out this topic - don't flowers make everything better?
The dehydrator has lots of possibilities - I dry chive blossoms that can bright up food with a sprinkle of color and taste in the mid-winter gray... and dry roses and add petals to tea, throw some of the dried rose buds into packaging for gifts.
I also steep the flowers in vinegar or oil to flavor them for cooking.
And with roses, the very fragrant ones can make an excellent sorbet - including a recipe from Jerry Traunfeld's Herb Farm cookbook.
