My oven temperature settings are bad, I just realised there is another way to know what is going on, what is practical?
I just want a probe that I can see outside of the oven, is a cable system worthwhile?

I can’t help with the temperature probe question, however old and what brand is your oven?

Would it be worthwhile trying to get the thermostat replaced?

Have you checked the seals - if they are loose, your oven could be losing heat.

Spare parts may still available for your oven.

I use a Therm Pro and measure the temperature for all meats.

It works well for my air fryer and I am sure it would work for the oven or even cooktop.

Being a smart ass beats the alternative. This tiny ad knows what I'm talking about:
