Does anyone have Bill Mollison's book on fermenting? If so, would you recommend it? I have several fermenting books and already do a lot of fermenting. I also have Introduction to Permaculture and the Permaculture Design Manual, so I know that although his books are very, very expensive, they are invaluable...... but this one is really high priced when you can find it! Is there anything in it that isn't in Sandor Katz's books, for instance?
BTW, here is my experience with fermented foods and health (copied off my facebook page, from a post I made in early Feb), in case it may be useful to someone:
I am a little hesitant to say this, because it has only been a month but... As some of you know, I have severe asthma. I was on prescription asthma meds for decades, that barely worked and had terrible side effects... I actually had a heart attack 10 years ago due in large part to the meds. After that, I did my best to stop taking prescriptions. It has been tough, and I have taken a lot of over the counter stuff. About a year ago, I discovered a Chinese herb called Dang Shen or codonopsis, also called "poor man's ginseng". It helped a lot - reduced asthma and chronic bronchitis symptoms by about 30%. About 6 months ago, I began making water kefir, and it further reduced my symptoms by another 20 -30%. Jan 1, I began making kombucha. Suddenly, I am asthma free, for the first time in 35 years! I'm still in Pinehurst, NC, with a severe allergy to pine trees and mold... which makes this place absolute hell. Someone is clearing and burning some lots down the road, and the smoke is thick. I'm still a bit congested, but I'm not coughing constantly or wheezing. I'm still sneezing and blowing my nose a lot, but this is the absolute worst place for an allergic asthmatic and a bad time of year. Suddenly, I have energy, I'm not exhausted, I'm not coughing, wheezing, puking from congestion, my throat isn't bleeding from constant coughing, my lungs aren't burning, my abdominals aren't aching from coughing and I'm not waking up at night gasping for air and shaking. I have spent 35 years feeing as if I was at the bottom of a deep pool, holding my breath. I couldn't run as a kid without passing out. I couldn't play a lot of sports and I spent my school years so hopped up on the prescriptions folks use to make crystal meth that I was half crazy all the time. I may have finally found the answer: codonopsis, kefir, kombucha, and I'm' also taking a couple capsules each a day of cod liver oil and MSM... and, I have cut way back on sugar. If you can't breath, or just have bad allergies, try this. It may help with some other auto-immune stuff too.
Now, because I don't feel comfortable making any recommendations that could be considered medical advice, I'm not going to give you any links or say what or how to. Look up Codonpsis, Water Kefir and Kombucha on your own - read the pros and cons and make your own decisions.
