Just found this paleo, grain-free bread recipe which someone on reddit thought was awesome. I don't currently have the ingredients, but if anyone beats me to it, let me know how you like it!

5 eggs? Thats an omelet... or quiche. 4 is about tops I go for nut bread... in a bigger pan. Looks good though. I will have to try coconut in Mark's bread when I can. I normally use a carton of eggs when I make 4 loaves. I add 5 or 6 bananas to a batch too. I used to use dry curd cottage cheese but found my son had problems with the casein in it... or maybe there was some antibiotics in the milk.

Gluten free, yes, but paleo? coconut and almonds do not grow in the same place...

A paleo should be what we can harvest at the same time and in the same place... or else, it is beyond prehistoric possibilities!!
Half joking, but a reality!

(and i use both coconut and almonds, and only almonds come from my place... sigh....)

paleo bread should be an oxymoron. i appreciate the effort, but trying to recreate these processed foods with "acceptable" ingredients isn't what paleo is all about. stick to real, whole food with a single ingredient, and you'll be happier and healthier. sorry, not trying to be negative.

Well, it depends. Obviously, paleo bread or a paleo imitation of any other processed food-like creation shouldn't be the bulk of someone's diet. But as an occasional treat that helps keep them away from sugars and grains, it's a lot better than the alternative.

Not paleontology myself, but I was just thinking about the giant who said "I'll grind ye bones to make my bread!
So bone flour bread, paleo?

I've tinkered around a little bit and found this bread recipe to be tasty with a nice whole grain like texture and affordable, much more affordable than the almond bread. However I find ghee/butter and golden flax seeds to render the best results. Also I used the mini oven instead of the microwave.
Be warned though, it's addicting.
