I built some junkpole fence and a gate at the 2021 SKIP event.  For reference it took me about 14 hours to do this work.  That doesn't include making the rock jacks or harvesting/transporting the junkpoles.  But I did have to finish two of the rock jacks on either side of the gate.

The technique we used was to attach the upper and lower horizontal poles (bigguns) to the junk poles with two screws (toenailed at different angles for strength).  Then attaching four vertical (normal sized) junkpoles to those two horizontals.  Then one normal sized junkpole horizontally to the verticals to hold in all the remaining loose junkpoles.  When installing them, strive for one pointy end up then one pointy end down (thin part cut off so it rests on a finger sized diameter or fatter).
