Thanks, Anne. We're working on solutions, today. I've always hated glass top stoves, but not so much that I had that kind of vendetta against them.
So, here's my cornbread salad recipe:
1 recipe Northern style (sweet) cornbread, cubed
1C diced bell pepper
1/2C diced red onion
2/3C scallions, cut to about 1/8"
1C cucumber, peeled & diced (optional)
1pint grape tomatoes, halved
12 - 16oz pkg frozen shoepeg sweetcorn
1 - 1.5lb bacon, cut to 1"pieces & cooked crisp
1C mayo
1C buttermilk dressing(I make my own)
Black pepper, to taste (I use about 2 - 3T)
Combine gently, but well. Chill overnight (I typically have to threaten the family's lives to keep them out of it).
