Zucchini - anyone preserving it for winter?

I froze some in the past, and don’t really remember how it was…

Anyone has any favorite methods for preserving it for winter?

It's got a *lot* of water in it for dehydrating. However, I have dehydrated Delicata squash by grating it first. Then I crushed it to add to soups.

Sometimes I grate it and then freeze it. Then I can add it to spaghetti sauce.

Most often, I make zucchini bread and butter pickles - they're popular with my friends, but not so much with Hubby and #2 Son who much prefer cucumber pickles, however, cucs like it warmer than we can reliably get.

DW grates and freezes portions for use in zucchini muffins, loaves, and chocolate chip zucchini cake. All of these are bloody magnificent, because the zukes keep everything moist.

I just helped her grate up a giant batch of zucchini relish, which is equally bloody magnificent. Those of you who think of relish as that green Bick's slop have no idea what you're missing.

I half agree with you! I make green tomato relish (it's hard to get tomatoes to ripen in my climate, so there's usually plenty of green ones around in the fall). I'll take my green tomato relish over the commercial slop any day!
