I think many plants are smarter than humans give them credit for.
I don't know chayote myself, but all the pictures I've seen of it growing were on an arbor type support - think big and beefy. There are plenty of examples on Google images, but here's one local to me:

I saw examples of them growing along wires, on cattle panels, on tripods, but all appeared sturdy and reliable. I expect that if you build something over where the plant is growing, training it up the first few feet to get it started will overcome any concern the plants feel from their earlier disappointment in their housing situation!
