I don't get fanatical about it. But, I try to eat what I've grown year round also. Two things I find that help get me through the "hungry gap" are Jerusalem Artichokes, they can be harvested mid winter and Asparagus which is the first thing to produce a harvest in the spring.
How's the challenge going?
We just had our first asparagus of the year with dinner, and then this thread was recommended at the bottom of a post I was reading.
(Reminder to myself) God didn't say, "well said, well planned, and well thought out." He said, "well done."
Nikki's Wishlist
I was doing pretty good initially then sort of stopped tracking things as it became less of a focus. Add in a long trip away from home...
I'm back on my homestead now and while it's still mostly brown outside things are starting to grow which makes the challenge easier. Today I harvested some daylily shoots and had them as part of a green curry. When working in the yard and greenhouse I'm seeing a few things that can go in my salads such as arugula, dandelion, sheep sorrel, and wild carrot greens.
