Sounds like a terrific project! Your shed-style space and hand-built stove reminds me of the kitchen in Nancy Sutton’s post "Caucasian Dessert cooking in the countryside" (Country Life Vlog). Skip ahead to the 5:30 time mark for a look at the layout. I'm not sure what the type of stove the family made is called, but if you're looking at additional possibilities, maybe you’ll find some inspiration here and in the video (time mark 12:30):

The idea with the lorena is that lots of heat hits the bottom, and there is heat on the sides also. So a big pot can be heated very fast. Once up to temp, it could be moved to the cooktop and the hole that the pot occupied is covered with a chunk of metal. And the flat lorena surface could also be used as a type of cooktop.
I'm thinking the regular cooktop would be like the glass surface we have at allerton abbey.
