I used coconut oil, but now I'm thinking olive oil might be better in future due to the great distance the oil had to travel to get to Spain, where olive oil is plentiful. But I've heard olive oil can go rancid. Any one have any firsthand experience with olive oil going rancid? Maybe it's climate dependent, and may not occur in an arid climate? That's my only reservation about making the switch.
I oiled two cutting boards and 4 wooden cooking thingies with coconut oil!
