I normally mean to dry them for a week or so. Then I find them a few weeks later

It doesn't seem to hurt them to let them dry longer. I truthfully don't give it much thought and I have good germination. Their longevity may suffer, but I've never stored seeds long-term so I can't be sure.
I just ordered a bicycle pump that I'm going to use to vacuum pack seeds. I'll probably have to be more conscious of the moisture content of those.
