well the pandemic isolation blues are here and haven't had any toys and prizes or candies or cookies in a long time and its getting that time of year that turning on the oven is a bit of welcome warmth.
well dark chocolate is a pick me up kind of food so---
im thinking dark chocolate oatmeal crunchy cookies
maybe taking the old toll house recipe to new levels substituting oats and whole wheat flour instead of white flour and dark brown sugar instead of regular brown sugar.
any of you expert bakers out there have any suggestions for decadent, maybe somewhat wholesome cookie recipes or substitutions to old well known recipes.

I've made these a few times, both with and without the caramel sauce, and they are really tasty. I used almond meal in place of the ground-up seeds and goat milk in place of the coconut milk and it worked really well.

Camping Cookies

350 F greased pan



½ c butter (softened)

1 cup brown sugar

½ cup white sugar

1.     Beat until fluffy.

3 eggs

1 tsp vanilla

2 cups peanut butter

2.     Add to sugar and blend well.

4 cup quick oatmeal

2 tsp baking soda

3.     Mix together in a separate bowl.

1 cup raisons

1 cup dark chocolate chips

½ cup sunflower seeds

½ cup oatmeal

4.     Mix together in a separate bowl.

 Add half of 3 then 4 then remaining 3 to the mixture from 1 and 2.

I use the dough hook for the last step, as this is a “BIG” recipe.

These got called "camping cookies" because when interior canoeing and everyone else said they weren't ready for lunch, but my blood sugar was dropping, one of these was good for an hour of paddling. To make them easier to pack, I started pressing the dough into a jelly roll pan, scoring a grid the size I wanted, and cooking them like a granola bar. It took a little longer in the oven than regular round cookies, but over all less time as it does a pan and a half of whatever size my pan is.

The China study cookbook has a whole wheat chocolate chip cookie recipe that we love. I’m not sure I’m allowed to copy it here without violating copyright issues

Bruce, would chocolate brownies work for you? We found a recipe for brownies using almond flour (back when wheat flour was scarce). I'll post the recipe if anyone wants it.
I'm not sure they're "healthy" unless wheat is bad for your health? and the carbs from wheat flour are probably eclipsed by the sugar anyways?
Honestly, I clicked on this thread because I saw "more" and "cookies" together. :-p
