Camping Cookies
350 F greased pan
½ c butter (softened)
1 cup brown sugar
½ cup white sugar
1. Beat until fluffy.
3 eggs
1
tsp vanilla
2 cups peanut butter
2. Add to sugar and blend well.
4 cup quick oatmeal
2 tsp baking soda
3. Mix together in a separate bowl.
1 cup raisons
1 cup dark chocolate chips
½ cup sunflower seeds
½ cup oatmeal
4. Mix together in a separate bowl.
Add half of 3 then 4 then remaining 3 to the mixture from 1 and 2.
I use the dough hook for the last step, as this is a “BIG” recipe.
These got called "camping cookies" because when interior canoeing and everyone else said they weren't ready for lunch, but my blood sugar was dropping, one of these was good for an hour of paddling. To make them easier to pack, I started pressing the dough into a jelly roll pan, scoring a grid the size I wanted, and cooking them like a granola bar. It took a little longer in the oven than regular round cookies, but over all less time as it does a pan and a half of whatever size my pan is.
