How long are hard boiled eggs good for?

I was reading this post https://permies.com/t/280540/cook-Hard-Boiled-Eggs#2959164 and a question came to mind.

We hard boil a lot of eggs using the instant pot. We do 4-6 dozen in one day.

If you search how long they should be good for, the internet says a few days to a week. We usually eat them within 2 or 3 weeks and keep them refrigerated and have no issues so it must be longer than a week.

In your experience, how long do they stay good for?

Good question. For me, if I've peeled off the shells I expect to use them in four days. If they're in the shell, I've kept them a week without trouble. Refrigerated, of course.

They may indeed last longer. The problem is, the only way to know for certain is to make myself sick. No thanks.

Several weeks? At least three.

I also have the situation where I've pickled boiled eggs in live brine and all the stuff online says they're only good that way for some ridiculously short period of time but I've eaten them six months later with no illness.

I keep them for a week. More than a week and I know I'm making too many (and the dog might get a few). We all eat a lot of boiled eggs though, it's rare that they last more than 5 days in my house.

I've had them last longer than a week, in the shell, in the fridge. I almost want to say 2 weeks or more, but don't quote me. And when I was growing up we'd dye Easter eggs (hard boiled) and leave them out on the table as a decoration for a couple days, then refrigerate them. I've seen them go bad, and don't worry, if your nose and eyes work you will notice when you peel them. They'll get a yellowish color, maybe only on the air spot at first, and they'll shrivel a bit or pull away from the shell, and if it goes beyond that they'll start to smell. You'll notice. If it looks and smells normal it's still fine.

Deviled eggs only last a few minutes.

{I know this was not the answer that the OP was looking for)

Likewise here on the brine. I used to do jars and jars at a time and sometimes I'd find a few that were way past what the guidance is and would eat them with no issues.

The standard guidance just does not seem to fit.

Well that's a whole different story!! I need to expel the hungry hordes from my house while I'm making them or they'll mysteriously disappear between my hand and the serving dish.....

Thank you for the info. I know you can't do the float test on them. It is helpful to now that if they are bad, it'll be obvious.

The trivet in the instant pot holds 12. Doing 4-6 dozen at a time works for us because we have surplus eggs and I get into a routine doing that many cycles at once.

Well, surplus until the winter solstice We have just enough then. I think they call it chicken math.

I see what you mean about 8 at a time and especially deviled. I think I could eat that many by myself over 2 meals.

I don't know why I am the way I am, but if it goes past a week I start getting iffy. I think my knowledge just is handed down from family and not from actually trying to see how long a hard boil egg could potentially last.

If I have a glut of eggs, and I have hard boiled them and still am not getting through them fast enough, I tend to start pickling them to extend the life... and I love pickled eggs!

I would trust pickled eggs a lot longer. (Plus, it takes me back in time to a dive bar with cheap draft beer, young artsy friends, and a giant vat of pickled eggs as the only snacks available. )
