So, since we're now in pumpkin season, how do you all like to use your pumpkin?  I've made 3 batches of soup, pumpkin french toast, pumpkin bread,and a few pies over the summer.  I still have quite a lot of roasted pumpkin pulp in the freezer, with a pile of pumpkins from this years' harvest.  I'm wanting to learn how to incorporate it into pasta noodles or sauces; maybe something filled like ravioli, tortellini, manicotti, etc.  Do any of you have experience with this?  I've made homemade egg noodles before, but didn't know what herbs complement the pumpkin flavor if mixed into the dough for noodles?  I'm open to all ideas.

I like the combination with spinach and garlic, etc.  I use pumpkin in lasagna with spinach and in soup with spinach, onions, garlic, chicken broth and beans.  Sage is an herb that pairs well with spinach, too.

with pasta, definitely pumpkin with sage, sauteed up in some browned butter with garlic, leek, or onion, yowza that's good stuff.

Here i also make a lot of steamed chinese bread (mantou) with pumpkin or sweet potato in the mix. a basic recipe is https://mykitchen101en.com/pumpkin-mantou-pumpkin-chinese-steamed-bun/
i've seen similar recipes used for pan-fried pancakes as well.

I haven't made pumpkins noodles though i have read about them.

Pumpkin noodles are a great way to have noodles that are gluten-free.

I saw someone suggest using pumpkin noodles instead of ramen noodles.

I bet that a substitute for pasta sauce would work for pumpkin.

Have you thought about making pumpkin pie leathers?

Besides making pumpkin bread, make pumpkin muffins.

I know you said you already made soup, but I wanted to say that I love pumpkin curry soup. Curry is magic with pumpkin. You can make it with coconut milk or finish it with cream. Alternately, you can use chunks of pumpkin to make a curry stir fry and serve it over or with rice.

If you make puree, you can mix in curry and use that for ravioli filling. I might sift a bit of ground cinnamon or clove into the flour before I add the egg when making the pasta sheets.
You can also mix puree with ricotta or cottage cheese for the filling if you prefer.
