Wow....was my gustatory imagination ever off base!  From the photo my mind and tastebuds instantly assumed cooked, flaked coconut in a self-generated coconut cream sauce.  LOL :-)   After Googling 'coconut rice', it's clear that this is white rice cooked in coconut milk, correct....(?).  Looks really delectible and I can see where adding the mango would make it pretty awesome.  Thanks!......may add it as dessert to curry night....

It is delectable indeed! I like it because it’s only slightly sweet and the mango adds a pop of extra sweetness and brightness against the creaminess of the rice. And yes, it is steamed first then cooked with the coconut milk. A favorite dessert of mine and arguably better cold the next day :)

Magdelene, you've hit the nail on the head! Always, listen to you body. It took me Waay too long to figure that out. We are not Super humans. We require regular rest AND, relaxation
