New stretch goal announced! More cheese!

$24,000aud ($17,750usd)

While working on this cookbook, I’ve also been slowly distilling more of my homestead cheese knowledge into an ebook.

A Year in an Off-Grid Kitchen contains all you need to know to get started with home cheesemaking, and all the important recipes. I know that there are also people out there who want to know even more about cheese - more recipes, and more understanding about the processes, and for this a second book is needed... Small Batch Natural Cheesemaking answers even more “why?” and “how?” questions about why certain things are done, so that you can more affectively troubleshoot, experiment, and confidently go about cheesemaking even if you have to go and deal with a homestead emergency in the middle of the process. Not only will you get even more cheese recipes from this book, but also an understanding about why each process is done, and how it works.

If we reach this stretch goal, I will give a copy of this ebook to everyone that has chosen a reward level with cooking club membership - this includes the ultimate supporter level, which has all the other extra goodies included too.

New stretch goal: Bundle of homesteading, cooking, and gardening ebooks!
$31,000aud ($23,075usd)

Fellow Permies staff member Leigh Tate is an experienced homesteader who has many creative ideas towards self reliance, and I’m really pleased to be offering some of her homestead wisdom up as a stretch goal. There are four ebooks on offer from the little series of homestead how-tos:

• How To Preserve Eggs: freezing, pickling, dehydrating, larding, water glassing, & more

• How To Bake Without Baking Powder: modern and historical alternatives for light and tasty baked goods

• How To Garden For Goats: gardening, foraging, small scale grain and hay, & more

• How To Grow Ginger: how to grow, harvest, use, and perpetuate this tropical spice in a non-tropical climate

A few things covered in these books:

How To Freeze Eggs

How To Pickle Eggs

How To Dehydrate Eggs

How To Water Glass Eggs

How To Lime Eggs

How To Lard (Or Oil) Eggs

How To Have Fresh Eggs All Winter

Are There Substitutes for Baking Soda?

Before There Was Baking Soda: Potash, Pearlash, & Saleratus

Experiments in Baking with Wood Ash

Ash Water Vs. Lye Water Vs. Lye Water: Are They All the Same?

Other Historical Leaveners

To Substitute Sourdough Starter for Baking Powder

To Substitute Eggshell for Baking Soda

Growing ginger and keeping a continual supply

How To Feed Garden Produce to Goats

Small Scale Grains, Pasture, and Hay

Stover - What It Is and How To Feed It

How To Forage For Your Goats

How To Make Your Own Vitamin & Mineral Mix for goats

These ebooks will give you even more helpful homestead knowledge and kitchen skills. You can find out more about them here: http://kikobian.com/little_series.html

Everyone at the ultimate supporter level and up will receive these ebooks if the stretch goal is reached!

New backer levels!
I’ve added some more levels for multiple books above the “ultimate supporter” level.

These backer levels do not include the extra stuff at the ultimate supporter level, but will still include the stretch goals! There is now the option to choose 3 paperbacks or 3 hardcovers, or a combination of paperbacks and hardcovers. Any extra books beyond this can be added as add ons.

Options and add ons
I've had some feedback that the new Kickstarter add-ons feature is not working for everyone, and have added a couple more backer levels -  ‘paperback plus ebook’,  ‘hardcover plus ebook’, and ‘paperback plus ebook plus cooking club'. If you've been trying to add an ebook as an add on and it hasn't worked, there are now new backer levels set up for you.

Book update
The proofing process is going well, and I am working on creating the indexes. The first index I'm creating is by ingredient, so that you can easily come in from the garden or market with a basket full of something, turn to the back of the book, and find many recipes where it can be used.

I just got my book today in Texas and I’m so excited to try out the recipes! I love that they seem to simple and versatile. I’m not a natural cook so it can be stressful to me at times, but your book looks like it will be a great guide to get me going. Especially on things like bone broth I have always intended to do but never have...

How are you all enjoying the book?

I've just posted a new Kickstarter update, because I need some help to get this book into more kitchens.

Here's the update: https://www.kickstarter.com/projects/706848724/real-food-cookbook-a-year-in-an-off-grid-kitchen/posts/3263698/

There was a weird glitch and the paperback was unavailable for most of July and it's now less visible as a result, with less people finding out about it. The release date for a new version of the paperback is August the 3rd.

If you could take the time to share a link to the book somewhere, or to write a review, it would greatly be appreciated!

The Amazon link is here: https://www.amazon.com/Year-Off-Grid-Kitchen-Homestead-Resilient/dp/0648466167/?tag=pfa12-20

International people will probably find Book Depository easier here: https://www.bookdepository.com/Year-Off-Grid-Kitchen-Kate-Downham/9780648466161
