I have a fennel plant in my small veg patch. I collected some this morning. I separated the seed heads from the twigs over a glass dish and rescued a couple of bugs including a restless bush cricket, which I freed back into the garden. Then I scrunch them up and rubbed between my hands, freeing as many seeds as I could. The glass dish is great for blowing away the chaff. The seeds whiz around the end and the lighter stuff blows off into the garden. There may have been a few seeds that escaped but I don’t mind volunteer fennel plants in the garden. I ended up with a heaped  tablespoon of seeds - just under 5 grams. I ground them in a pestle and mortar and added to a saucepan along with 247 g of gula melaka (solid unrefined cane sugar) and 247 g of water. I heated the water until the sugar melted and the solution started bubbling. Then I left it to cool for an hour and infuse before straining into a jar. Tastes amazing and I love the golden hue!

My recipe:
250g raw sugar
250g water
1 tablespoon / 5g fennel seeds

Steps:
Grind seeds in a pestle and mortar
Put everything into a small saucepan over a low heat
Stir occasionally, melting the sugar and heating until the first bubbles appear
Strain into a sterile jar

I picked a few fennel seed heads from the garden and used the more green ones because they had such a sweet intense flavor.
I used about a tablespoon of seeds and ground them up a bit in a mortar and pestle. Then I put a cup of water and almost a cup of sugar in a pot with the seeds. I brought it to a gentle boil and stirred it well to dissolve the sugar. I turned off the burner and let it steep for 20 mins. Finally I strained it into a jar.
