In January or February 2020, I purchase a package of pepperoni at Sam's Club.  It might have been two 3 pound packages.

I like nibbling on pieces of pepperoni though I usually use it for pizza.

Long story short, I have not been making or baking pizza.

I keep the pepperoni the the freezer so it is still good though probably need using up.

What are some ways I can use pepperoni?  I believe I have almost four pounds and one package has not even been opened.

I'd start making more pizza...

An easy way I've found to make pizzas is to take store-bought tortillas and use them as the crust. Add sauce, veggies, meat, cheese and some oregano and heat for 10 min in the toaster oven.  For a luxurious pizza do a tortilla, put cheese on it, then another tortilla with the pizza makings on that one.  Voila - stuffed crust pizza.

I also mix random yummy meat like hot dogs and brats into egg and veggie scromlettes for breakfast.  Cook garlic, onions, peppers, sw taters, taters, eggplant, whatever you have, then add some meat and finish with a few eggs.  Mix the eggs in with the rest before it cooks too much and they'll hold everything together into a omlette-like thing.  Maybe add salsa and breakfast is served.

Not exactly pepperoni, but one of my favourite ingredients is chorizo sausage.

Chopped into chunks of about 1/2 cm, then fried in the pan, before adding what ever veggies you like. Bloody marvellous stuff. I do the same when frying eggs some times.

Personal favourite is butternut squash strips, pan fried with chorizo.

You might be able to get a similar effect with your pepperoni?

My kids like to put it on bagels on top of the cream cheese. Hash would work as well. Or a pasta dish with peppers, onions and crushed tomatoes.

Pepperoni is great on a hot italian sub sandwich. You could also sub it for the chorizo in caldo verde (portuguese soup with potatoes and hearty greens). It's a great soup, especially in cold weather.

Perhaps use it as part of a charcuterie board, for snacks and appetizers.

That's what I've (sort of!) been trying to do around here now that we are doing a keto-ish diet. Pepperoni is hard salami with peppery seasonings, after all!

I often take thin slices and bake them for a few minutes, until they're crunchy, and we eat them like crackers, with soups, in soft dips, etc. The dehydrator works for this, too, and doesn't require quite as much careful monitoring.

I got out the pepperoni the other day and it had been in the freezer too long and had lost it color and taste

This brought the pepperoni back to life and it is really good on crackers with cream cheese.

I found a lost packet of pepperoni the other day and made myself a stromboli! I didn`t have frozen tomato sauce, so used a recipe with garlic butter instead.
