I'm not a huge fan of Turkey so we don't eat it often.  It's poultry so we made our Chicken Turkey and Dumplings recipe to use up some of the turkey we still have.

I'm thinking of making a turkey salad by mincing the turkey, adding minced onion, salad dressing, salt and pepper.  Not sure what else to do with it, though.  

What are you doing with your extra turkey from Thanksgiving?

A nice hot turkey sandwich is always a solid reuse of turkey in my household. I might have to try that minced turkey salad though!

Quite a few times after thanksgiving I have made a turkey soup because of the availability of the carcass. It is a lot of work though so I don't do it every time.

I vote for the turkey sandwich, too though mine would need lettuce and tomato which I don't currently have.

I am planning to use my leftover turkey for open-face sandwiches.

I have been a fan of open-face sandwiches since I ate them at the Cotton Club Restaurant, ( don't think that was the exact name).

I toast the bread, and cut it diagonally to make four pieces, diced turkey and leftover turkey gravy.

Turkey salad sounds good, too.

I have an easy and yummy Chicken and Dumplings recipe that I substituted turkey for the chicken.  Still yummy!

I will add to the people talking about a hot turkey sandwich.

However, my mom often makes turkey pot pies out of them. Not sure if that is any less work than you turkey salad though.
