This is a badge bit (BB) that is part of the PEP curriculum.  Completing this BB is part of getting the sand badge in Food Prep and Preservation

In this Badge Bit, you will make a soup or stew or pottage or chowder. Basically, you're going to be cooking food in liquid. You can do this in a pressure cooker, slow cooker, haybox cooker, or stovetop or even oven. Throw your desired ingredients in your desired liquid (tomato sauce, broth, milk) and cook it!

Here are some great permies threads about soup:
Free and Frugal Soup
  • Fresh Fava Soup
  • Vegan Pho Noodle Soup Recipe
  • Favourite Bone Broth Recipes (Has recipe for egg drop soup and french onion soup)
  • Cooking with Dry Beans and Peas
  • Nanny's Chicken and Dumplings
  • Portuguese Lunch--Sopa Alentejana

  • I find it useful to find out common seasonings.ingredient combos for a region, and use those to season my soups. The flavors are complimentary, and even if you don't have them all, they'll generally work well together:
  • Chicken Soup: Carrots, chicken (or other poultry), maybe peas, onions, garlic, thyme, oregano, rosemary, basil, parsley, celery/lovage, marjoram.
  • Asian/Pho/Chinese Soup: We can't have soy sauce, but I've found that mixing ginger, garlic, green onions (if I have them) with salt and a bit of pepper and maybe honey makes for a very nice substitute. I like to use chicken or pork or eggs as meat. Peas and carrots work well, too. So do green leafy veggies. Beef+brocoli is also a good combo.
  • Moraccan-style Soup: Lamb or beef, with dates/figs/apricots. Carrots and potatoes make good fillers. Cumin+cinnamon+garlic+ginger+turmeric+paprika
  • Mexican Style: Beef or pork or chicken. Stewed tomatoes, corn, beans, rice, peppers.  Oregano+garlic+paprika+onion+chili/cayanne pepper. Cilantro, avocado

  • My soup combos are NOT probably authentic, but they work together. At least, well enough for my family to enjoy eating it! I suggest looking at a bunch of recipes for what type of soup you want, and using the most common ingredients!

To complete this BB, the minimum requirements are:
      - should serve at least 2 people (leftovers!)
      - ingredients are not be pre-processed (no can-of-whatever soup or preshredded cheese, for example)
      - no microwave

To show you've completed this Badge Bit, you must:
      - post a rough recipe of what you put in your soup/stew/chowder/pottage
      - post a picture of you preparing some of the ingredients (chopping herbs or carrots, for example)
      - post a picture of your ingredients in their cooking vessel
      - post a picture of your finished soup!

    Clarifications:
    - All food prep and preservation BBs strictly prohibit plastic, teflon or aluminum touching the food at any point

Lamb stew.  All ingrediants are shown. The jar is home canned turkey broth. The mound of green on cutting board is rosemary . Multiplying onions. Carrots. Potatos. A hunk of lamb. Salt and pepper. Cubed and set to "meat/stew" setting on pressure cooker.

I omitted 1 carrot and 2 onions. Just added things til it looked right.

Stew and dumplings using ..... whatever is to hand! Today, carrillera which was xanned last year when there was an offer on, ratatouille which I made last year with gluts of courgette, red peppers, aubergine and toms, some carrots and potatoes from the bottom of the fridge.  I also added a can of chicken from last year to push up the meat content for my carniverous hubby. Lastly, suet dumplings because, well, why not.

Just to clarify: the desired liquid would count as an ingredient and thus be not-pre-processed too: no broth / bullion cubes / "better than bullion" / tomato sauce etc, unless you made it yourself. Does that sound accurate to the goal?

(third time the charm: I tried to pot this twice before from phone, didn't work so now I am posting from laptop. fingers crossed)

Beef stew with root vegetables, cooked in instant pot, recipe adapted from the internet.

Cubed chuck roast beef, cubed root vegetables, chopped onions and garlic. Browned beef cubes in ghee, sauteed onions and garlic in ghee and drippings from beef browning. Throw everything in pot, add tomato sauce, beef broth, salt and pepper, set pot to pressure cook for 35 min.

Edited to add: tomato sauce and beef broth were both homemde.

I didnt read that interpretation. I am not the judge or jury though. My interpretation is to keep it in its simplest form. Broth is ok, canned soup is not ok. Canned soup is "broth +".

I'm thinking--and I am NOT Paul, so he'll be the final determiner--that store bought products that are minimully processed (like tomato sauce in a glass jar made with whole food ingredients and no preservative) would be okay. I'm thinking some of the canned broths would count if they were just meat/bone broth & veggies & salt, but bullion would be too processed.

But, I wouldn't spend the time taking pictures until you hear from Paul as to whether or not those ingredients are okay. Or, you can make your own bone broth! (Here's a thread on making tasty bone broth https://permies.com/t/73308/kitchen/favourite-bone-broth-recipes)

    Split pea soup / stew

1 Ham steak, 4-5 potatoes, 3 handfuls of carrots and an onion all chopped up.

2 cups dry split peas soaked overnight with 2 TBL lemon juice. Drained and rinced

1 tsp marjoram, 1 TBL Redmond salt, 40 cranks of ground pepper

1 quart bone broth and 1 quart water

Mix all together and cook for 8 hrs in slow cooker or "ugly box" - insulated home made slow cooker, smaller cousin to the "easy bake coffin" at Wheaton labs.

I made some chicken soup last night! I had to dig through the snow to get to my parsley, thyme, marjoram, basil and rosemary, but the fresh herbs were well worth it! I also chopped up carrots, added peas, dehydrated onions, and 4 chicken thighs, and some salt and pepper. Pressure cooked it in my Instant Pot for 30 minutes. The family loved it! I'm thankful for a mom who had me help make chicken soup when I was a teenager, because I can always make delicious chicken-based soups. Thanks, Mom!
