I'm not a fan of this vinegar infusion, actually.

The herb came from my garden. The vinegar was crabapple cider vinegar, homeade.

I harvested and dried the lemon balm over the summer. I then crushed the leave and poured white wine vinegar to cover the herb. I shook the jar daily and stored it in a dark cabinet, then strained it after 2 weeks.

I made a lemon balm vinegar. Planning to use as a dressing, marinade, or over cooked greens from the garden.
