Here is my submission for the Natural Medicine Aspect - Sand for Straw - Make a Burdock Root Syrup BB.

I harvested Burdock in Missoula this past summer and dried it while at WL.  Then I ground it before measuring and using for this recipe.

I've been reducing my sugar intake (particularly added sugars) due to a medical condition and decided to use only Erythritol as a sugar substitute.  It is a naturally occurring sugar alcohol, certified organic, and USDA-approved product that also has a low glycemic and insulin index. Yeah for those of us reducing or eliminating sugars.

I started with this recipe and modified it a bit:
- 3 Tbps ground (not powdered) dried burdock root
- 2-3 ounces fresh organic ginger (peeled and sliced)
- 2 star anise (crushed)
- 3 cups Water
- 1/4 cup Erythritol

To document completion of the BB, I have provided proof of the following as pictures:
- Harvested plant material (just harvested)
- Making the syrup with a description and link to the recipe I used
- Finished syrup in a labeled container

I made a burdock decoction, then used 1 cup decoction and 1/2c cane sugar and simmered until reduced to 1/2c syrup.

This was my first time making a syrup like this. I also only learned what burdock was yesterday. Let's hope it's good!

Here is the recipe I used. I only had enough burdock for a half batch. It says to make a decoction first. You can see the decoction I made in this post.




Reducing the decoction down to about 63 mL.




Adding 100 g of sugar.



Stirred until the sugar dissolved.



The finished syrup.
