Please join me in welcoming Meredith Leigh, author of The Ethical Meat Handbook- Revised & Expanded 2nd Edition!

Eating consciously and diversely may be the most revolutionary and proactive step we can take to ensure the resilience of our food system, and in turn, the health and nourishment of the greater ecosystem.

The Ethical Meat Handbook proves that flavorful, healthy meat can be produced and consumed both sustainably and responsibly. Covering lamb, pork, poultry and beef, this complete guide to raising, dressing, cutting and processing animals for food includes:

  • Basic butchery: whole animal, primals, subprimals, and end-cuts, including safety and knife skills

  •
  • Charcuterie: history, general science and math principles, tooling up, and recipes

  •
  • Culinary highlights: getting creative, preparing difficult cuts, sauces, ferments, and extras.

  • Designed to help you take a quantum leap in self-reliance, this hands-on, practical guide covers everything you need to know, from field to fork.

Read the review of The Ethical Meat Handbook here!

At the end of this week, we'll make a drawing for 4 lucky winners to win a copy of The Ethical Meat Handbook! From now until Friday, all new posts in the Food Choices forum are eligible to win.

To win, you must use a name that follows our naming policy and you must have your email set up to receive the Daily-ish email. Higher quality posts are weighed more highly than posts that just say, "I want this book!"

The winners will be notified by Purple Moosage and must respond within 24 hours. Only the winners who respond within that timeframe will receive their book. Watch for a PM, and a notice in this thread announcing the winners!

Please remember that we favour perennial discussion.  The threads you start will last beyond the event.  You don't need to use Meredith Leigh's name to get her attention. We like these threads to be accessible to everyone, and some people may not post their experiences if the thread is directed to the author alone.

Posts in this thread won't count as an entry to win the tool, but please say "Hi!" to Meredith Leigh and make her feel welcome!

Hi Meredith,  I haven't read your Ethical Meat Handbook yet, so can't comment on that - I just wanted to take this chance to say thanks heaps for your  Accessing soil health using a microscope videos.  They were superb!

Krista I really wish I could incorporate soil microscopy into the book- sort of like a deep dive into animal impact on the land, as told through microbes. Another project, another day perhaps.

This is great! Welcome Meridith. I've been looking to expand my library.  Mostly gardening stuff. I've been looking into meat rabbits. Even if I don't  win a copy, at least I'll have the info to find it
    Stay well everyone,
    Blessings ~

Hey Meredith - Welcome!  Looks like a great book and something a LOT more people will be interested in these days of empty shelves...  Thanks for bringing it to everyone's attention.

Okay, need some help - Dave or whomever, you said that posts to this thread won't count as an entry to win the book and I didn't see any threads in the "Food Choices" forum main page to add to.  Do you want us to start a new topic in Food Choices and post "Why this is THE perfect addition to my library, and why I would want it and why I would like to be added and possibly selected as one of the winners of the book...please, please, please?"

    Please advise.  Thanks - KBH

Welcome to permies! I am new to the forums but I have enjoyed them so far. I look forward to seeing contributions from you and the wonderful ideas they will inspire from the other minds on the forums.
I hadn't heard of your book until just now as I've learned toward the appropriate technology portion of this group but I am interested to read this title as I start to move toward the gardening and meat production areas of permaculture in my life.
    Thanks for joining the discussion!

Welcome - the good news: my public library has a copy of your book - yippeee!
the bad news: the library is closed until we get covid19 under control

We process a lot of Muscovy duck, but it would be interesting to read about how you use different types of meat in different ways. I followed the principle from beef and made "Corned Duck" the last two years and it was awesome. There are so many things we can do at home with a little guidance and inspiration.

We are encouraging all kinds of perennial discussions about food choices. Topics saying "I want to win this book" end up being deleted. If you can think of aspects of food choices and ethical eating to discuss, you're welcome to create new threads about these ideas, and new posts made in any existing thread in food choices also count towards winning a book. Also if you have questions for Meredith and other Permies members about butchering, food choices, ethical meat eating, or any other relevant subject, please feel free to start new threads for those too, and that will count in the giveaway as well.

    Thanks Kate -

Okay, I think I've got it.  I grew up on a mini-farm in the NorCal foothills where my parents raised us on 2.5 acres with chickens, meat rabbits and mostly grass fed beef.  I've gone from there into small and large game hunting but have never gotten an education in butchery and proper meat preparation.  Done a LOT of roasts and jerky in my time...about all I know how to do right (I think...).

I'll read through some of the other posts and see if I can contribute a smidge.  Or maybe a good question.

    Thanks Again - KBH

Congratulations winners! I hope you put your new books to good permaculture use in whatever way you can. Doing meat ethically takes practice and observation - both fit with permaculture basics!

YES! Wow, this is fantastic! Thank you so much!!!  I'm super excited to read Meredith's book - I watched all the clips and listened to the audio interview that was posted on the other pages along with Kate's fantastic review so I'm chomping at the bit to get it.  Back a hundred years ago I used to participate in the local 4H chapter as a kid so hopefully I can glean another skill to pass on in the future - as well as provide my own growing family with healthy ethically grown meats.

    THANKS AGAIN! - KBH
