Looks like making whipped cream isn't on the list but cream is.  So I took raw milk and skimmed the cream off it.  Then I made ice cream.  I also made whipped cream from some store bought whipping cream as a bonus :)

Recipe for the ice cream is in the picture.  Recipe for cream is to take it off the top of the milk.  I used a turkey baster to remove it.  Recipe for whipped cream is a pint of cream in a quart jar with a table spoon of maple syrup.  Shake till it's whipped cream.

Minimum requirements for this BB:
- Dairy - do two of the following (no duplication - ie. not two butters):
  - Vegan cheese
  - Nut milk
  - Seed milk
  - Hard cheese (counts as two)
  - Butter
  - Powdered milk
  - Yogurt
  - Cream
  - Cottage cheese
  - Ice cream
  - Soft cheeses
  - Kefir
  - Whole milk buttermilk

I made feta cheese with cow milk and then later a vegan coconut milk.

First the Feta:

The ingredients I used


The curds when they are set and cut

I added a fresh fig leaf to the brine to keep the curds below surface and add a hint of flavor.


After 3 weeks of aging, it was ready to eat. Good flavor, a softer texture than what I buy in the store. This picture shows my feta in lower section of dish and store-bought in upper.


Now the coconut milk. I started with just organic coconut flour and filtered water. No recipe.


Blended for a few minutes on "liquefy"


Strained using a cotton cloth.


In the end, I have about 3 cups of coconut "milk" that is the consistency of skimmed cows milk. I wanted it thin like this, rather than the thinker canned coconut milk.

I stumbled upon this BB ... Never knew I could get a BB for something I do very often. I did not think of it as 'making a dairy product', because I start with a dairy product and only process that further on.
And I did not think of plant-based dairy! Thank you M Broussard.

I hope so I meet the 'Minimum requirements for this BB'...
I made soft cheese and nut milk. They're in the list.

Recipe Soft Cheese: I started with Bulgarian yoghurt and had the whey drip out until it looked and tasted like Cream Cheese. In part of it I added some herbs.

The yoghurt it started with (50% discount because it was at its last selling date).

After many of the whey dripped out (which I drank) I hung it to drip some more.

Then it looked like this. After this photo I flattened it a little.

Half of it I left 'naturelle', in the other half I added herbs.

Nutmilk, recipe: mixed nuts (not roasted), first soaked in water for some hours. Then put in the blender (with new water) and mixed until it looked like milk. Sieved through a piece of cloth. Then I had two products: the Nutmilk and the 'pulp'. The last one I added to a soup, the milk I used to bake pancakes.

Put it in a jar in the fridge until I was going to use it.

Hi Mike, I saw you changed the requirements, but still approved my submission. Next time I'll make kefir first, or add lemon juice to milk to make it into soft cheese.
