This is a badge bit (BB) that is part of the PEP curriculum.  Completing this BB is part of getting the sand badge in Food Prep and Preservation

For this badge bit, you will cook and serve one pound of sunchokes (aka Jerusalem Artichokes) within 2 hours of harvesting.

To complete this BB, the minimum requirements are:
  - you must harvest at least one pound of sunchokes
  - you must begin cooking the sunchokes within 2 hours of harvesting
  - (some slow cook techniques might mean that the sunchokes are served a day or two later)

To show you've completed this Badge Bit, you must provide:
   - a picture of you harvesting the sunchokes
   - a picture of the harvested sunchokes on a scale
   - a picture of the sunchokes being prepared
   - a picture of the sunchokes being served

Sunchokes are awesome, and they are easy to grow.
They also grow in massive quantities, which makes them a good source of food to harvest!
