UPDATE: there is some sugar in the yogurt, so this recipe is not technically sugar free.. no processed sugar was added.. yogurt may be substituted with water~!
THE FOOD: Here we have a chance to experiment with food.. in this episode, i'll be going for something gluten free and sugar free.. how about
PANCAKES?
.. gluten free sugar free pancakes this morning.. small batch: 1/4c tapioca flour, 1/2c oat meal, 1/2c oat flour, 1/4c
water, 1/4c yogurt, 1/2tsp vanilla extract, 1/4
tsp salt, 1/4 tsp baking soda, 1/2tsp cinnamon, 1/4tsp ginger, 1/4c cashews (or other nuts; optional), consistency
should be pasty (not watery or drippy), pan fry in a flow-y layer of coconut oil (if oil too shallow, pancake will not crisp on the outside, which may be preferable, but i like it crispy; take extra caution with hot oil!), place a heaping tablespoon of batter on medium-low to medium heat pan, (i like them to be about 2-3 inches in diameter and about 1/2 inch in height).. i ate them so fast that i forgot to take pics.. sorry..
