I harvested some thyme from my herb bed, picked over and washed it before chopping into small pieces. I put it in a clean jar with homemade kombucha vinegar and set my self a reminder to shake everyday.

Two weeks later, I strained the herbs, washed up the jar and poured back the infusion.

I grew this thyme last year and I'm pleasantly surprised to see that it's cold hardy enough to come back after the winter! So here I go harvesting it..... I infused it in home-made apple cider vinegar for a couple weeks and strained it out. Yum! Now I wish I had made more

My Thyme on this planet goes on. This thyme as vinegar!

I was and am still very happy to see the gorgeous pink colour the vinegar took after soaking the flowers with the leaf.

Here's apple cider vinegar that infused for a few weeks with fresh thyme from my garden.
I love the smell of the finished vinegar. Very thyme-y!

I created thyme infused vinegar.  When I merged the vinegar with the thyme on Sept 2, I mis-labeled it "Sept 2024" instead of "Sept 2, 24" so I corrected it in the finished labeled jar.
