Please note that ALL food prep BBs strictly prohibit plastic, teflon or aluminum touching the food during the cooking or storage process.  

This includes food that came in plastic containers from the store, plastic cooking utensils like spoons, spatulas, teflon pans, etc.

The end goal is to move toward cooking from own-grown ingredients and similar sources and using PEP principles (for example sustainable and non-toxic materials) as much as possible.

Some BB submissions are being grandfathered in, but we are moving toward more strict enforcement of this policy.

Homemade bread is the best!!  Butter & Jam on it...even better!!  We made 2 loaves of honey whole wheat bread, 1 of them with cinnamon sugar swirls, yummy!

I Made 2 more loaves of bread, these ones were yum yum. Honey wheat and cinnamon. I grind my own wheat and use local raw super yum honey.

I made chestnut bread. I'm a novice baker and my oven sucks, it does not heat evenly at all and it's very small. Ovens are not a standard part of kitchens in Japan like they are where I grew up in the USA.

My bread is far from perfect, but it might fulfill the minimum requirements. The high portion of chestnut seems to have made the rise rather small compared to previous 100% flour breads. The taste was very decent, strong and nutty. It's certainly a great way to eat hordes of chestnuts if you have a glut.

I subject myself to your judgement.

To complete this BB, the minimum requirements are:
 - two loaves of bread.
 - the bread must be slice-able and not crumble to pieces.
 - It shouldn't be  burnt.
 - Not using a bread machine
 - the two loaves can be the same or different (cinnnamon raisin, jalapeno, herb, etc.)

Ingredients
4 SERVINGS
200 grams strong flour
250 grams dried chestnuts
15 grams yeast (fresh brewer’s)
1 Tbsp. oil
1 Tbsp. honey
two pinches of salt
50 mL and 130 mL warm water

Directions
   Grind the dried chestnuts finely.
   Dilute the yeast with 50 milliliters of warm water and the honey, cover and let it rest for 10 minutes.
   Kneading by hand method: Preheat the oven to 190°C.
   Sift the flour with the ground chestnuts in a bowl, make a well in the center.
   Place the yeast in the well and sprinkle the flour with 2 pinches of salt.
   Begin kneading the dough with the flours, incorporating 130 to 150 milliliters of warm water a little at a time, add the oil and continue kneading for 5 minutes.
   Shape the dough into a ball, cover with a damp cloth and let it rest in a warm area until it has doubled in volume.
   Punch down the dough delicately, and using your hands shape the loaves, coat the base of the rolls in flour, and place them on a wax paper-lined baking sheet.
   Cover the loaves with a kitchen towel and let them rise for 50 to 60 minutes.
   Bake for approximately 30 minutes.

I had lots of chestnuts.


I made them into powder.


I mixed them with bread flour.



I added salt.


I added yeast, hot water, and honey


I mixed the things


I made a ball and added oil, then kneaded it for a long time.


I took this ball, separated it into two loaves and let it rise.


Then I baked it in the oven for about 30 minutes - since the oven heats unevenly I had to stop it just short since one loaf was starting to become overly brown.


I successfully made two loaves of bread.


I sliced each loaf. They are cooked all the way through.

Happy Turkey Day!  

Since I eat keto,  almond flour is my go-to for baking.    I made two versions of almond flour breads for the holiday,  one savory and one sweet.

Almond-cheddar-rosemary bread (and biscuits with the extra batter)

3 cups almond flour
3eggs
2 cups shredded cheddar
1/4 cup olive oil
1 tsp. baking powder
1 tble rosemary
pinch of sea salt

Butter loaf pan,  preheat oven to 350F.    Mix wet ingredients.   Add almond flour and baking powder.  Mix in cheese.   Turn into loaf pan (or spoon onto cookie sheet for biscuits).  Bake 25 mins (test loaf with toothpick to make sure it's done).   Cool on rack.  

*Note:  this could have used one more egg, and another 1/8 cup olive oil.   It was a bit dry for my taste.  Flavor was excellent.

*Note:  I replaced the milk with 50/50 heavy cream and strong cold coffee,  and dropped the cocoa powder.    This recipe needed an additional 15 minutes in my oven.

The first loaf was a gluten free yeast bread from this recipe posted on Permies: https://permies.com/p/1161725. I used millet instead of brown rice and more buckwheat instead of teff. It was fine but didn't "wow" me. I'm going to keep looking at other whole grain gluten free breads.

The second loaf was an autumn quick bread, loosely based on this cardamom banana bread recipe: https://www.sweetowlbakes.com/blog/brown-butter-cardamom-banana-bread
I used my own blend of gluten free grains, reduced the sugar to 1/2 cup, used half ghee and half coconut oil instead of butter, and added cinnamon and ginger. Instead of bananas, I roasted and pureed pears, cranberries, and pumpkin. It turned out delicious. I've liked nearly every variation that I've made of that banana bread recipe.
