My wife and I had a simple meal for Christmas this year, certainly comparatively so from previous years. It's just the two of us this year, and we had our meal this evening on christmas eve, since we'll be on the road tomorrow. We had oven roasted chicken with sweet potatoes and peas. We placed a whole chicken in a buttered cast iron skillet and baked it in the oven at 425 for 75 minutes. The chicken neck was browned in butter with onions, carrots and parsley, then a little chicken stock was added, and this was set aside until the chicken came out of the oven. With the chicken out of the oven, the cast iron pan had drippings and some brown skin bits stuck to it and the gravy starter made earlier was added to the pan and reduced, making a delicious sauce, not real thick like a gravy. The sweet potatoes were baked in the oven and then mashed with butter, a little fresh squeezed orange juice & maple syrup, and salt. The peas were simply boiled and then a little butter and salt was added. Turned out real nice.
