My wife and I had a simple meal for Christmas this year, certainly comparatively so from previous years. It's just the two of us this year, and we had our meal this evening on christmas eve, since we'll be on the road tomorrow. We had oven roasted chicken with sweet potatoes and peas. We placed a whole chicken in a buttered cast iron skillet and baked it in the oven at 425 for 75 minutes. The chicken neck was browned in butter with onions, carrots and parsley, then a little chicken stock was added, and this was set aside until the chicken came out of the oven. With the chicken out of the oven, the cast iron pan had drippings and some brown skin bits stuck to it and the gravy starter made earlier was added to the pan and reduced, making a delicious sauce, not real thick like a gravy. The sweet potatoes were baked in the oven and then mashed with butter, a little fresh squeezed orange juice & maple syrup, and salt. The peas were simply boiled and then a little butter and salt was added. Turned out real nice.

I'll be making some neeps n tatties, some mushroom rosemary stuffing, a salad and some marinated portobellos. I made some tea cookies this afternoon for tomorrow's dessert

Here's our actual Christmas dinner. Chicken quesadilla! Last nights leftover chicken, cheese & sautéed onions. Of course we completely spaced out and forgot we have roasted poblanos, red bell and jalapeños from our summer garden in the freezer until after we made our supper. Next time.

I wish I was eating with you guys.  We're having conventionally raised ham, glazed with the contents of a plastic baggie where the only ingredient that existed 100 years ago is water.  "Rice" from a bag with "seasonings" included and some other side dishes.  I'm at the in-laws....

If we were hosting, it would probably be venison chili, roasted rooster or rooster soup as the main dish, wild rice and roasted veggies as the sides.

Just myself, husband and our dog at home for Christmas dinner this year so we had a roast chicken with cauliflower cheese and roast vegetables.

Deboned the chicken, stuffed with homemade sage and onion breadcrumb stuffing topped with reconstituted birch boletes sauted with onion and homegrown steamed and chopped kale, rolled and tied up tight.

Put everything except the cauliflower cheese into the oven, took the dog for a walk and came back to a late lunch, early dinner.

Ate lots but still had five portions left over that have been packed up into the freezer.
My week day work lunches are shared with my colleagues. Although they are never labelled, they have learnt to identify what's in the containers.

They even bring their washed take out containers from home for me to re use.

Also made an apple frangipane flan for dessert but we'll eat that during the week, we were both too full to have any tonight.

There is a 25 pound Turkey in the freezer …still frozen.   Just my wife and I for Christmas. So, with that in mind, my wife made a couple pies. I will make dressing today.  I have zero idea what the main course will be.  We have had one crisis after another since Thanksgiving. All seem to be favorably resolved at present.  


Added:  Hey!  I found a COSTCO chicken in the freezer.  Our meal is complete.

We are having Christmas Dinner tomorrow.

We are having Pork Chops cooked in the air fryer, potato salad, cole slaw and green beans.

My plan is to cook the pork chops today and heat them in the toaster oven tomorrow.

For Christmas Supper, tonight, I plan to split a pork chop with dear hubby with french fries.  That could easily change.

Breakfast was Stollen and Hutzelbrot plus sliced apples and Terry’s chocolate orange.  For Christmas dinner we are hosting 14. I am making fresh cranberry salad, whole baked pumpkin stuffed with wild rice, mushrooms, chestnuts and dried berries (it’s a Choctaw pumpkin grown by Blake Lenoir). Daughter is making deviled eggs and an orange-honey trifle. Hubby is making prime rib and Yorkshire pudding.

Just to be non-traditional...

My DiL's upstairs neighbor gave us a lovely piece of wild-caught salmon.

I will roast it in the oven on top of a sprig of fresh Rosemary (trust me, it's awesome...) and serve it with organic rice I cooked yesterday, and green beans I blanched and froze in September from my "Jungle Garden".

Apparently, it's peach/mango pie for desert.

Traditional in some parts of Central and Eastern Europe in the old times: cabbage rolls made with a mixture of pork and beef sausage, rice, sauteed onions and herbs wrapped in pickled cabbage leaves, cooked slow in a pot with some smoked ribs, some of the pickled cabbage juice and tomato sauce, served with mashed potatoes and a dollop of sour cream.


My better half made a German chocolate cake for dessert.

I started on some scalloped turnips, potatoes and sweet potatoes. Not finishing them tonight I set some aside and stir  fired them with sauerkraut, cheese, leeks, and (cooked) delicata squash.

I have heard recently of others making scalloped potatoes as a Christmas but oddly, it was a spontaneous choice, made a few years ago with no awareness of those traditions, to make scalloped potato and gilfeathers for Christmas. I suppose the season chooses the foods.
