I strained my first pint of elderberry vinegar today!

I've had a bountiful harvest of elderberries this year.


Recipe from my natural medicine journal.


Making the infused vinegar.


I shook the jar daily and in a couple of days the vinegar began to change color.


Straining the infusion into an old vinegar bottle I saved.


I can see a lot of uses for it: salad dressing, marinades, switchel, etc. (need to add those to my notebook!)

This was the first time I've made an infused vinegar, and I'm pretty pleased with the concept. Easy to do and an excellent way to incorporate medicinal foods into our diet.

Here is my submission for the Natural Medicine - Sand - Make an Elderberry Vinegar Infusion BB.

I used the heated method with the ingredients shown plus 1 cup of pre-boiled water to help with rehydration.  After the berries were rehydrated and cooked, the mixture was transferred to a jar (with a non-reactive lid) and shaken daily for over 3 weeks.

To document the completion of the BB, I have provided the following:
  - the journal page showing the recipe of the elderberry infused vinegar
  - picture of the elderberries, freshly harvested
  - picture of the infused vinegar being made
  - picture of the finished vinegar in its labeled jar

I harvested elderberries from several trees. I've included an image of one of them.

I infused the elderberries with homemade apple-cider vinegar. It changed colour almost immediately!

After several weeks I strained the berries and re-jarred the vinegar.

This elderberry vinegar is so yummy! I love it over salads.

The elderberries were wild harvested. The vinegar is crabapple cider vinegar I made. I made a video short of preparing elderberry, sage and lemon balm vinegars.
