Greg—we loosely followed a recipe for nasu dengaku from the internet.. some garlic, ginger, miso, sesame oil, etc.. we would have liked to let it marinade ten more minutes, but this way we got to taste the eggplant’s neutral flavor as well as the seasoning on top.. please share your picture if you decide to go for it! :)
