Stir fry!

Or, for the linguists, "pytt i panne", traditionally consisting of potatoes, onions, some meat, and whatever leftovers are found in the fridge.

This pytt i panne was based on whatever was found in the fridge (carrot and sausage) and the garden (all the rest). The sausage was used mainly as a spice - just a tiny bit to add taste. (Controversial opinion: I think this is the very best way sausage can be used!)

Recipe:
- 4 potatoes, cubed
- 1 carrot, cut in small cubes
- 1 small onion
- 6 thin slices of danish potato sausage, cut in tiny cubes
- 3 salsify (salsifies??), cut in small cubes
- a couple handfuls kale, chopped
- a good handful snap peas, in fingerthick slices
- a handful fava beans
- a handful perennial arugula, roughly chopped
- a handful oregano, garlic chives and thyme, finely chopped
- butter for frying
- salt and pepper

Fry potatoes, carrot, salsify, onion and sausage in butter until the potatoes are soft. Sprinkle with salt and pepper. Add kale, snap peas and fava beans. When the skin of the fava beans start to break open, mix in arugula and herbs. Done!

Edit: the pan is solid cast iron, description here: https://www.knivesandtools.com/en/pt/-le-creuset-frying-pan-28cm-2-6l-red.htm

I made rabbit stir fry with fresh rabbit,  green beans, garlic chives, and chard.    Cooked in olive oil from a glass bottle,  in a ceramic coated fry pan.

Recipe:  chop up all ingredients,  toss in hot oil until cooked lol.

Made two servings;   dinner and lunch the next day!   It was DELICIOUS!

I do a lot of stir fry in the summer with whatever combination of fresh veg/herb I harvested that day!

Hi staff! Saw the note now - no, it's not teflon, it's cast iron.

Here's a description of it: https://www.knivesandtools.com/en/pt/-le-creuset-frying-pan-28cm-2-6l-red.htm

Please note that ALL food prep BBs strictly prohibit plastic, teflon or aluminum touching the food during the cooking or storage process.

This includes food that came in plastic containers from the store, plastic cooking utensils like spoons, spatulas, teflon pans, etc.

The end goal is to move toward cooking from own-grown ingredients and similar sources and using PEP principles (for example sustainable and non-toxic materials) as much as possible.

Some BB submissions are being grandfathered in, but we are moving toward more strict enforcement of this policy.

Chicken stir fry for me and the boys!

Raw cashews - toss in dry skillet and cook on medium high heat until toasted.  Remove and set aside.

1 onion, chopped
1 cup chopped carrots
3 celery stalks, chopped
3/4 red pepper, chopped

Pour 1-2 tablespoons of oil in your skillet.  Toss in skillet one at a time in that order. Let cook while you chop the next bit:

1/2 thumb of ginger, minced
3 cloves garlic, minced

Add and stir.  Add:

1 cup chicken broth

Let simmer while you:

Add soy sauce, sesame oil, and rice vinegar to taste.

Last:

Stir together 2 tablespoons cornstarch with 2-3 tablespoons cold water, stir in with:

Chopped cooked chicken (maybe a cup to a cup and a half?)

Continue to stir until cornstarch has thicken the broth.  Turn it off and stir in the cashews.  Serve over rice.

Howdy, I made dinner last night. I started by tossing frozen bacon fat into the cast iron skillet. I added chicken, onions, and carrots.  Later I added some ginger, garlic salt and soy sauce. I cannot cook rice to the way my wife likes it, but when we eat out we normally have plenty of leftovers or I order an extra bowl of rice to take home.  So I added some leftovers from a few days ago and a bit more soy sauce. As you can see it was plenty for the four of us and enough for leftovers for me tonight (I work nights), plus I always like the char on the bottom.   If you are wondering why my kids bowls are a little light, they gorged themselves on watermelon and strawberries our neighbor brought over about an hour prior to dinner.

My potato and ham stir fry. Cooked in my stainless steel pan with butter for the oil. The red potatoes are home grown, along with the onion/chives. But that wasn't enough to get to 1 1/2 pounds so I made up the difference with store bought Yukon gold. This served My husband, son, and I with generous Leftovers packed up for my dad.
